Estrela is Pedro’s top wine, and the name of his older donkey. He describes it himself as being a more experienced and serious wine, just like the donkey.
The grapes are harvested per hand from the vineyards oldest vines, planted on a soil with high density of schist. Followed up by vinification in granite lagares where the most macerates for 5 days. Afterwards the wine ages in 225L French oak barrels for approximately 12 to 18 months.
