From the single vineyard Vinha Formal, in the heart of Portugal’s sparkling wine region. Made from Bical and Cercial, fermented in stainless steel tanks, disgorged in October 2025, and with only minimal sulfur added. Fine bubbles, round fruit, lovely texture—and easily capable of aging for another 20 years.

The Pato family has been producing wines in Bairrada since the 18th century. Luis Pato pressed his first wine in 1980 and has since become a pioneer in the region and the undisputed master of the Baga grape. Many innovations can be traced back to him: destemming Baga grapes, aging in French oak, planting ungrafted vines, and so on... Today, Luis Pato has 60 hectares of vineyards on sandy and loamy-calcareous soils south and west of Sangalhos. “For us, producing wine is not only a passion, but also a pleasure.”
