Tawny Port

Tawny port wines mature for years and decades in small wooden barrels. They owe their name to their light, reddish-brown color. The barrel spores cause the wines to oxidize slowly. This changes the aromas, away from the typical red wine aromas and towards notes of dried fruit and nuts. The oxidation process also makes the port wine more stable, which is why an opened bottle has a longer shelf life.
