Cooking with Madeira
Madeira, a fortified wine from the island of the same name in the Atlantic, is a classic among the great wines used in the kitchen. Beef tongue in Madeira is legendary, and sauce madère (Madeira sauce) is a staple of French cuisine.
Our tip: Simply deglaze pan-fried vegetables, mushrooms or a steak with a dash of (plain, three-year-old) Madeira. Allow the alcohol to evaporate, then toss briefly. The sugar caramelises and the food takes on a wonderful aroma.
