Auf der Quinta do Vesuvio leisten sich die Symingtons den Luxus einer traditionellen Vinifikation. Die Trauben werden grundsätzlich in Lagares mit den Füßen gestampft. Von den Lageares fließt der Most mit Hilfe der Schwerkraft in das tiefer gelegene Fasslager, wo die Gärung gestoppt wird und der Wein reift.

Now in its fifth generation, the British-Portuguese Symington dynasty is one of the few names in the Douro region synonymous with the highest quality port wine. The family banner unites venerable houses such as Dow's, Graham's and Warre's – a heritage that comes with a responsibility.
